One toggle, Disable audio track, hands back the same video with no sound in it at all. Nothing else about the file is changed.
Set the audio codec, the bitrate, the sample rate and the channels. The output is still a video, so it plays exactly where the original did.
MP4 is the default, and MKV, MOV, AVI, WEBM, WMV, FLV, OGV, 3GP and 3G2 are all one pick away in the settings panel.
Codec is the format the track is re-encoded with. For an MP4 that is aac, he-aac v1, he-aac v2, mp3, mp2, opus, vorbis or copy. Bitrate runs from 8 to 320 kbps: higher means better sound and a bigger file. Sample rate runs from 8000 to 96000 Hz, where 44100 Hz is CD quality and 48000 Hz is the usual figure for video. Channels is stereo or mono.
Every one of those lists is read per container, not typed once, so you are only ever offered values the chosen output actually accepts. A container that does not accept a setting at all simply does not show it: 3GP has no bitrate control, because 3GP has no bitrate to set.
Leave a setting untouched and it is not sent, which means the container's own default is used.
The settings sit in the panel beside the uploader, and only appear once there is a file to apply them to.
Disable audio track is the mute switch. Turn it on and the audio settings step aside, because there is no longer a track to encode: what comes back is the video with its sound removed.
Copy is the opposite move. Pick it under Codec and the existing audio is carried into the new file as it is, with no second round of encoding. That is the setting to use when the only thing you want to change is the container.
You can add several videos at once. Each one is processed on its own with the same settings and comes back as its own file.

If you are unsure, leave the setting alone and the container's default is used.
