The settings panel offers bitrates from 64 to 320 kbps, sample rates up to 48000 Hz, stereo or mono, variable bitrate, volume normalization and a switch to strip cover art.
The conversion runs on our servers over an encrypted connection. There is no software to download and no account needed to pull an audio track out of a video.
Bitrate decides how much of the audio the MP3 keeps. 64 kbps is enough for speech, 192 kbps is what this page starts on, and 320 kbps is the highest the format takes. A higher number sounds better and makes a bigger file.
Variable bitrate is the alternative to a fixed number: the encoder spends more on busy passages and less on quiet ones, which usually sounds better at a similar file size. Sample rate reaches 48000 Hz, the rate video is normally recorded at, and 44100 Hz is CD quality.
Channels can stay stereo or fold down to mono, which is the right choice for a voice recording. Two switches finish the panel: normalize the volume to an even level, and remove embedded cover art.
Bitrate and channels start on 192 kbps and stereo. Every other field starts on Auto, which leaves the decision to the conversion engine.
MP4 is what most people bring, and it is not the only input that works. MOV from an iPhone, AVI, WEBM, MKV, WMV and FLV all carry an audio track that can be lifted out the same way.

192 kbps is the starting value and a safe answer for music. For speech, a podcast or a lecture, 64 to 128 kbps sounds much the same and gives a far smaller file. 320 kbps is the maximum MP3 allows.
The MP3 can only hold what the video's audio track already contains. A quiet or noisy recording stays quiet or noisy, and asking for 320 kbps does not add detail that was never recorded.
